AddTrellisConsumerCheckpointStore<TContext>(IServiceCollection)

Registers the EF Core Trellis.IConsumerCheckpointStore backed by TContext. Pair this with AddTrellisConsumerCheckpoints(ModelBuilder) in the context's OnModelCreating. The store is a durable resume cursor — a performance optimization; once-effective processing stays with the inbox anti-join (FilterUnprocessedAsync(string, IReadOnlyCollection<Guid>, CancellationToken)) and dedup row, not the checkpoint.
